These golden, crispy fritters, made from grated squash and paired with a sour cream, offer a delightful crunch, embodying the rustic charm of Ukrainian home cooking.
Ingredients
- 1 lb zucchini
- 2 (1 lb) onions
- 2 eggs
- 4 tablespoons all purpose flour
- salt to taste
Instructions
Step 1
Grate the zucchini and chop the onion finely. Place both in a clean kitchen towel or cheesecloth and squeeze out excess moisture.
Step 2
Add eggs, flour, some salt, and mix until all ingredients are incorporated.
Step 3
Heat a frying pan over medium heat and add vegetable oil to coat the bottom. Put a spoonful of the batter onto the hot pan and form a fritter, slightly flattening it with the back of the spoon. Fry for 3-4 minutes on each side until golden brown.
Step 4
Place the cooked fritters on a plate lined with paper towels to absorb any excess oil. Serve hot with some sour cream
Variations
These fritters are juicy, a bit wet, and with a strong zucchini flavor. If you are more used to American-style pancakes, you can first bake zucchini and pass it through a blender before adding other ingredients.
