New Potatoes, a staple in Ukrainian cuisine, are a delightful showcase of the country's appreciation for simple, earthy flavors. Ingredients

  • 2 lbs of new potatoes
  • 4 oz. of butter
  • bunch of dill

Instructions

Step 1

Normally this dish is made of the very first potatoes, which are small and have a thin peel, so there is no need to peel and cut it. Just clean the potato thoroughly, and cut some big ones in halves.

Step 2

Cook potatoes in salty water until it's done.

Step 3

Drain the water. Add butter and chopped dill. Shake your pot with the lid closed so that the butter and herbs spread evenly.

Step 4

Serve as a garnish with some meat. It also pairs perfectly with spring radish salad.

Variations

Add some grated garlic together with the dill if you like it spicy. The fresh new garlic will be a perfect choice.

You can also replace the butter with virgin vegetable oil. Just find an organic and unprocessed one with a strong flavor. The best (but not easy to find) option would be a freshly pressed sunflower oil. Pumpkin seeds, linseed, or hemp oil will also be a good choice.
