Nalysnyky is a classic Ukrainian dish. These delicate, thin pancakes, often filled with a variety of sweet or savory fillings, are a delightful exploration of texture and flavor, showcasing the versatility of Ukrainian cuisine.

Ingredients
For the crêpes:
- 1 cup of milk
- 1 cup of flour
- 2 eggs
- ½ teaspoon of sugar
- 2 tablespoons of vegetable oil or melted butter
For the filling:
- 1½ cup of farmers cheese
- 1 egg
- 2 tablespoons of sugar
- ½ cup of melted butter for brushing
- sour cream for serving
Instructions
Step 1
In a mixing bowl, combine milk, flour, eggs, sugar and oil. Whisk until you have a smooth batter.
Step 2
Heat a non-stick skillet or crêpe pan over medium heat. Lightly grease the pan with a small amount of oil or butter. Pour a small amount of batter into the hot skillet, swirling it around to spread evenly and create a thin crêpe. Cook for about 1-2 minutes until the edges start to brown, then flip and cook the other side for another minute.
Step 3
For the filling combine all the ingredients and mix until it's smooth and well-combined.
Step 4
Take one crêpe and place a spoonful of the filling along one edge of the crêpe. Roll the crêpe, enclosing the filling, to create a cylindrical shape (like a cigar).
Step 5
Place the filled crêpes on the baking tray, brush with the melted butter, and place in the warm oven for 5-10 minutes.
Step 6
Serve with some sour cream, jam, or honey.
Variations
Feel free to experiment with the fillings upon your preferences. You may add some raisins or other dried fruits, lemon zest etc. Or add some salt and your favorite herbs to make a non-sweet version.
